The guide will give you an insight into the intricacies of Vietnamese food including details on ingredients and the historical background of popular dishes. Try seasonal fruits and sample a tasty French-inspired snack from a street cart. Walk through the bustling streets of the Old Quarter chowing on the famed Hanoi dish Banh Cuon. Wander past stalls and quiet lanes observing local life that has changed little in 1000 years. Sample a barbecue of flame-grilled meat and vegetable specialties. For dessert - fresh fruit smothered with crushed iced and condensed milk. Continue to one of Hanoi's best kept secrets, a cafe with stunning views over Hoan Kiem Lake for 'egg coffee' - or a cold beer. Afterwards explore on your own, or the guide will help you with directions back to your accommodation. Hanoi Highlights 42.00 EUR Commence with a visit to the Ho Chi Minh complex and see the reverence in which Uncle Ho is held. Other sites include his former residences House 54 and the Stilt House, plus the Presidential Palace that he declined to use. Visits are also made to Hanoi landmarks such as the One Pillar Pagoda, the Temple of Literature and the Museum of Ethnology. Lunch is taken at a restaurant in Hanoi's hectic old quarter, after which an exploration of this ancient trading area will be made on foot. Observe street life and visiting local markets before finishing with refreshments at a "bia hoi", a street stall serving up local fresh-brewed beer from the barrel where you can swap stories with locals eager to practise their language skills. Village Discovery 46.50 EUR The tour begins with a one-hour drive to Bat Trang ceramic village where there is a chance to visit the kilns and workshops. Continue to the community house of Dinh Bang. Traditionally all villages in Vietnam had a community house where all decisions regarding the village were made and was the core of Vietnamese culture. Not far from the communal house lives a family who make lacquerware. Our next stop is the Do Temple that honours the emperors of the Ly Dynasty. During their reign Vietnam experienced an era of prosperity and independence. The temple was originally built in 1030. At the small township of Tu Son we take a simple lunch of local dishes. Following lunch we visit Dong Ky wood carving village. The journey passes through a beautiful rural setting of rice paddies with plenty of photo opportunities. Explore the village and its crafts before returning to Hanoi. Citadels Karsts And Cycle 70.00 EUR Journey to the province of Ninh Binh, approximately two hours drive from Hanoi. The first destination is Hoa Lu, location of the capital of Vietnam during the Dinh Dynasty (968-980) and early Le Dynasty (980-1009). The ancient citadel once covered 300 hectares of land, however the passage of time has left few remains. On arrival visit the Dinh & Le Temple, restored in the 17th century and believed to be built on the original foundations of the old palaces. Before lunch take a 12 kilometre cycle ride along secluded backroads. After lunch visit Tam Coc, often referred to as the dry Ha Long Bay due to the spectacular karsts rising up from the paddy and towering over the region. Here we board rowing boats for a two-hour journey through caves, passing local villages along the river system of the Red River Delta. The lush paddies and karsts make a stunning backdrop for the keen photographer. Return to Hanoi at the conclusion of the tour. Ha Long Bay 83.50 EUR Depart for Ha Long Bay via the Hong Ngoc Humanity Centre, developed to provide support to local communities including the disabled. On arrival in Ha Long board a private boat for a cruise of the bay, famous for its scenic aspect of karsts jutting out of the sea. Ha Long Bay means "Descending Dragon" and legend has it that when the Vietnamese were fighting off foreign invaders, the gods sent a family of dragons to assist them. During the battle the dragons spat out jewels that would later become the islands scattered around the bay. The cruise visits a fishing village to learn more about the culture and customs of the local inhabitants. The next stop is at one of the numerous limestone caves in the area followed by a chance to stop and swim in the emerald waters providing the weather is warm enough. Also enjoy a seafood lunch on the boat, what a way to spend the day. Our final visit for the day is the Ben Thanh market where we can practice our bargaining skills. Cu Chi Experience 39.00 EUR Leaving the hustle and bustle of Ho Chi Minh City behind journey into the countryside bound for the Cu Chi Tunnels. The tunnels were built by local fighters during the Indochina conflict as a base from which the Viet Cong could covertly operate from close to the Southern Vietnamese capital. Initial construction started in 1948 when the Viet Minh required somewhere to hide from French air attacks and by 1965, the complex was estimated to consist of 200 km of tunnels. It included, hospitals, schools, meeting rooms, kitchens and sleeping quarters. To protect against outside intruders booby traps were laid throughout the complex. Before arriving at the tunnel visit some local friends and get an insight into life in the area, past and present. The local guide will take you on a fascinating trip underground to learn more about the conditions the people lived in, the hardships they faced and the amazing ingenuity employed to make the tunnels habitable.
